Information
Cava is a sparkling wine that is produced in Spain using the traditional method, the same method used to produce Champagne. It is made from a blend of native Spanish grape varieties, such as Macabeo, Parellada, and Xarel-lo, though Chardonnay and Pinot Noir may also be used. The wine is aged on the lees for at least nine months, resulting in a creamy and complex flavor profile with notes of citrus, green apple, and toasted bread.
Fun facts
Unlike Champagne, which typically ages on its lees for a minimum of 15 months, Cava has varying aging requirements depending on its classification. For example, Cava joven (young) has a minimum aging period of 9 months, while Cava reserva requires at least 15 months of aging, and Cava gran reserva must be aged for a minimum of 30 months.

Classic food pairings for Cava include tapas such as patatas bravas, Spanish omelette (tortilla española), or gambas al ajillo (garlic shrimp). Additionally, it pairs well with seafood dishes like grilled octopus, shrimp ceviche, or seafood paella. These light and flavorful dishes complement Cava's crisp acidity and effervescence, enhancing its refreshing and lively characteristics.
