Unlike Champagne, which typically ages on its lees for a minimum of 15 months, Cava has varying aging requirements depending on its classification. For example, Cava joven (young) has a minimum aging period of 9 months, while Cava reserva requires at least 15 months of aging, and Cava gran reserva must be aged for a minimum of 30 months.
